[Wayland] Only build the Wayland platform plugin by default

Since the QtCompositor API is still experimental, it should be disabled by default for Qt 5.1. We should add a flag that has to be set before the QtCompositor API gets built, that way people can easily build the QtWayland module and get the Wayland platform plugin for Wayland client support.
